General recipe for risotto

Ingredients

Instructions

  1. Toast the rice for 2-3m
  2. Add an onion and sauté with oil/butter
  3. If cooking with mushrooms add now
  4. Add 175ml of white wine and reduce
  5. Add extras ie. tomato
  6. Slowly stir in veg stock for ~15m
  7. When cooked, add 100g of parmigiano and spoon of butter (and pesto if making pesto risotto, or top with feta and roasted tomatoes)
