General recipe for risotto
Ingredients
Instructions
- Toast the rice for 2-3m
- Add an onion and sauté with oil/butter
- If cooking with mushrooms add now
- Add 175ml of white wine and reduce
- Add extras ie. tomato
- Slowly stir in veg stock for ~15m
- When cooked, add 100g of parmigiano and spoon of butter (and pesto if making pesto risotto, or top with feta and roasted tomatoes)
