  1. Chop and boil the potatoes. Once done, add milk, butter and chives to make mashed potatoes.
  2. Slice the carrot into half moons and trim the green beans. Trim the broccoli and chop into smaller pieces.
  3. Cook the beans, broccoli and carrot in oil until slightly charred.
  4. Add the mince, cook until no longer pink.
  5. Add tomato paste, red wine jus, soy sauce and beef stock. Add a splash of water. Cook until reduced and thick.
  6. Spread the mashed potato into a base on the plate. Top with the mince and vegetable mixture. Sprinkle with parmesan.
