Beef and Red Wine Open Pie

Beef and red wine filling with roasted vegetables, topped with creamy mashed potato and parmesan. Open pie — no pastry base, just layers that come together on the plate.

- Chop and boil the potatoes. Once done, add milk, butter and chives to make mashed potatoes.
- Slice the carrot into half moons and trim the green beans. Trim the broccoli and chop into smaller pieces.
- Cook the beans, broccoli and carrot in oil until slightly charred.
- Add the mince, cook until no longer pink.
- Add tomato paste, red wine jus, soy sauce and beef stock. Add a splash of water. Cook until reduced and thick.
- Spread the mashed potato into a base on the plate. Top with the mince and vegetable mixture. Sprinkle with parmesan.
