Stuffed Zucchinis

A light, high protein low carb meal perfect for a quick and easy lunch. The stuffing can be anything you want, so get creative!

Instructions
- Cut the zucchinis down the middle and scoop the flesh
- Cook the flesh and garlic with salt and pepper in oil with the seasonings
- Bake the zucchinis for 5-10m in oven or air fryer
- Combine the flesh with tuna, corn, mayo, tomato paste, parmesan
- Fill the empty zucchini shells with the paste, press down and cover with cheese
- Bake for a few minutes to seal it with the cheese
- If you're feeling brave add a layer of parmesan to a pan and try to fry the zucchini upside down to sear the cheese and the tops
- Meanwhile prep the salad and cook the wedges with rosemary
