Ragu A La Bolognese

A deeply flavoured, authentic meat sauce. A blend of beef and pork mince is cooked down with salty pancetta, aromatic vegetables, and red wine, then simmered for hours until the tomatoes transform into a rich, complex ragu.

Instructions
- Make soffritto (fry onion, carrot, celery), then add in pancetta for 5 mins.
- Add beef and pork mince, cook until brown.
- Add a pinch of nutmeg, salt and pepper; cook off the liquid by simmering and stirring.
- Add wine and cook off alcohol.
- Stir in tomato paste and cook for 3 mins.
- Add crushed tomatoes and ½ cup of water.
- Season generously and cook for 3-6 hours.
