Roman Pepper Chicken

A rustic, Italian-inspired one-pot meal. Chicken thighs are braised slowly in white wine and tomatoes with plenty of sweet bell peppers until falling off the bone. The sauce reduces down to a thick, flavourful gravy that coats every bite.

- Cook onions in olive oil then add garlic and tomato paste for another few mins.
- Add chicken and cook until no pink is showing.
- Add wine and reduce.
- Add tomatoes, sliced bell peppers, and ½ cup of water.
- Season generously with salt and pepper.
- Cook covered for 1 hour, then uncovered for ~30 mins, until sauce has thickened.
