Sausage and Pepper Skewers

A fun, barbecue-style meal cooked indoors. Honey mustard sausage chunks and sweet bell peppers are glazed in BBQ sauce and roasted on skewers. Served alongside seasoned potato wedges and a creamy, garlic-spiked homemade coleslaw.

  1. Roast potato wedges in oil, smoked paprika, salt, pepper.
  2. Add sausage chunks and bell pepper squares to a bowl with smoked paprika and half of the BBQ sauce and mix.
  3. Add sausage and pepper to skewers alternately.
  4. Bake at 200°C for 20-25 minutes.
  5. Mash roasted garlic with coleslaw, mayo, salt, and pepper.
  6. Sprinkle cheese and spring onion on wedges when nearly done until melted.
  7. Serve with BBQ sauce on the side.
