BBQ Chicken with Black Bean Wedges

A hearty, smoky traybake style meal. Succulent chicken thighs are simmered in a tangy cider-vinegar BBQ sauce with black beans, then spooned over crispy potato wedges and baked under a blanket of melting cheddar cheese and spring onions.

  1. Cut potatoes into wedges and cook in oven.
  2. Mix ~150ml of water, barbecue sauce, cider vinegar, chipotle paste, salt, and pepper; simmer.
  3. Cook chicken in sauce for ~15-20 minutes.
  4. Remove and roughly chop chicken.
  5. Mash half the beans, then add rinsed whole beans and grated carrot to the sauce.
  6. Cook on highest heat until thick, then add chopped chicken and simmer for 2 minutes.
  7. Layer cooked wedges, chicken sauce, then cheese, and bake for 5-6 minutes.
  8. Serve with spring onion.
