BBQ Chicken with Black Bean Wedges

A hearty, smoky traybake style meal. Succulent chicken thighs are simmered in a tangy cider-vinegar BBQ sauce with black beans, then spooned over crispy potato wedges and baked under a blanket of melting cheddar cheese and spring onions.

- Cut potatoes into wedges and cook in oven.
- Mix ~150ml of water, barbecue sauce, cider vinegar, chipotle paste, salt, and pepper; simmer.
- Cook chicken in sauce for ~15-20 minutes.
- Remove and roughly chop chicken.
- Mash half the beans, then add rinsed whole beans and grated carrot to the sauce.
- Cook on highest heat until thick, then add chopped chicken and simmer for 2 minutes.
- Layer cooked wedges, chicken sauce, then cheese, and bake for 5-6 minutes.
- Serve with spring onion.
