Honey Halloumi on Couscous

A vibrant Mediterranean-inspired bowl featuring fluffy couscous mixed with spiced chickpeas and fresh tomatoes. The star is the golden-fried salty halloumi, generously drizzled with sweet honey and served with a cooling, zesty mint and lemon yoghurt dressing.

Instructions

  1. Cook chickpeas with spices in oil for 1-2 minutes.
  2. Add ~300ml of veg stock and cook for 10-15 minutes.
  3. Fry the halloumi slices.
  4. Combine yoghurt, some mint, some lemon zest, salt, and pepper.
  5. Remove cooked halloumi and drizzle with honey.
  6. Stir tomatoes, remaining lemon zest, and mint into the cooked couscous.
  7. Add lemon juice.
  8. Top tabbouleh (couscous mix) with halloumi and mint yoghurt.
