Honey Halloumi on Couscous

Instructions
- Cook chickpeas with spices in oil for 1-2 minutes.
- Add ~300ml of veg stock and cook for 10-15 minutes.
- Fry the halloumi slices.
- Combine yoghurt, some mint, some lemon zest, salt, and pepper.
- Remove cooked halloumi and drizzle with honey.
- Stir tomatoes, remaining lemon zest, and mint into the cooked couscous.
- Add lemon juice.
- Top tabbouleh (couscous mix) with halloumi and mint yoghurt.
